Beef Baratheon with Portabello (or How to Cook a Steak)

Recently, I realized I didn't know how to cook a steak. Yes, dear Slayers, your faithful leader who is so full of delicious recipes couldn't even make a simple steak. My thinking is that if I don't know how to do it, there's gotta be someone else out there learning to cook who doesn't know how to do it either. Needless to say, I've picked up a few new skill points in Cooking and I'd like to share them with you.

This is not the kind of fillet mignon and potatoes you'll find in find dining. This is well seasoned meat to go with a bed of sautéed veggies. It should fill and fuel you without any extra fills or non-paleo comforts. I imagine it's the kind of thing Stannis Baratheon has grown accustomed to eating on Dragonstone. So let's get our meat hats on and fry ourselves up something delicious.

Serves: 2

Ingredients
  • 2 Steaks or 1 large steak to cut in half
  • Chili Powder
  • Salt
  • Pepper
  • Garlic and Onion Powder
  • Sweet Pepper
  • Small Onion
  • 1 large Portabello
  • 2 cloves of garlic
  • Extra Virgin Olive Oil spray

  1. Prep all your veggies. Chop up the onion and the pepper and cut your portabello into slices. 
  2. Mince two cloves of garlic.
  3. Set a frying pan on the stove on medium heat. 
  4. Spray the pan liberally with extra virgin olive oil. and let it heat up for about a minute. 
  5. Then add your minced garlic. Watch it carefully and as soon as it begins to brown (about 15-30 seconds), add your onions, portabello, and pepper. Use a spatula to stir it around and keep the garlic from burning to the bottom of the pan. 
  6. Season veggie pan with garlic powder, onion powder, salt, and pepper to taste. Continually watch these sautéing vegetables during the rest of the cooking process. Every few minutes you'll want to move and flip them around in the pan so they cook evenly and don't burn. 
  7. Set a second pan on medium heat.
  8. Now season the beef by sprinkling a little chili powder, garlic powder, onion powder, salt, and pepper on each side. Massage it gently so that everything is spread evenly across the meat.
  9. Add your steak to the pan and cook it for about 8 minutes on each side or till the internal temperature is where you want it to be. If you have an internal meat thermometer, the USDA says 125 degrees is rare, 145 is medium rare, 160 is medium and 170+ is well done.  You will want to flip it every 4-5 minutes or so that it doesn't burn or sear the meat on either side. 
  10. When your meat is done, turn off the stove and plate the veggies. 
  11. The plate your beef and voila, you've made yourself a juicy steak with veggies!

Jedi Fuel Pumpkin Smoothies

Winter is coming, and 'tis the season of all things Pumpkin Spice. Sadly, almost everything that calls my name is terrible for me. If I'm choosing to spend so much time building themed teams in Pokemon X, then I can't be simultaneously stuffing my face with everything that suits my fancy.

I'm convinced that there are Sith Lords out there with knowledge of all of my worst seasonal weaknesses. Between Pumpkin Spice Lattes at Starbucks, Pumpkin Smash smoothies at Jamba Juice, and an array of pumpkin flavored pastries at Dunkin' Donuts it's temptation city.  So I put out the call on twitter and facebook for Paleo Pumpkin recipes. Boy did I get a ton of great stuff back! My friend Michelle linked me a recipe for Raw Pumpkin Balls, which I haven't gotten a chance to try yet but I can only believe it's like Halloween exploding in your mouth based on the ingredient list. However it was my "Jedi Sister" Emily who blew it out of the park with a Paleo replacement for that Pumpkin Smash smoothie I've been  hankering for. 

Emily and I spent our youths looking at the sky and imagining our adventures among the stars as Jedi Knights. When we met at soccer practice and admitted our love of Han Solo, it was BFF central. We even saved all our money so we could go to Space Camp and buried a Jedi time capsule in my back yard with all of our childhood secrets. 

Emily is a powerful role model. Not only is she a thoughtful, empathetic, intelligent person, but she is determined to meet every challenge she faces head on. I remember when she got into the Naval Academy, she started doing athletic training at home in Chicago so that she would be ready. No one else I knew at that age was attempting something like that. Add to her list of accomplishments living abroad in Japan to serve in the navy, starting grad school, and spending her free time training for half marathons. Seriously, is there anything she can't do? Apparently not because I tried this recipe and its amazing. I made a few tiny adjustments, but we wouldn't be Jedi Sisters if we didn't collaborate on our missions! Try it out and let me know what you think!

Jedi Fuel Pumpkin Smoothie


  • Ingredients
  • 2/3 cup of almond milk
  • 1/3 cup of organic pure pumpkin (canned is fine, but read the label to make sure no sugar or chemicals are added)
  • 1 cup frozen organic pure pumpkin (same as above)
  • 1 tbs extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1 tsp nutmeg

  1. The day before you intend to make your smoothie, put one cup of canned pumpkin in the freezer. Make sure it's chopped up a bit so that you can use it in place of ice. Make sure you put it in a freezer safe plastic bag.
  2. Add all the ingredients to your blender. Make sure your "ice chip" pumpkin pieces are broken up. 
  3. Blend till smooth. 
  4. Drink in your Jedi Fuel, confident in your delicious yet healthy Light Side diet choice.

Motivated Monday: September Goals Check-In

Hey Slayers, it's Simone again! Sorry for the delay from my normal Friday post; I left work early with one of my rare migraine+aura combos, and while I'm lucky that my migraines are incredibly infrequent and far less severe than many, they're still not very conducive to writing, thinking, or really doing anything other than taking a nap. However, I'm rested up and back from a productive weekend, so let's dive in!

My September goals are going fairly well overall, though certainly far from perfect. (How does the quote go? "No plan survives initial contact"?) As far as tracking my spending goes, I have diligently kept up my check register in addition to checking in on my budget on Mint.com. Hooray! The snags: My part-time job is at an outdoor retailer with insanely good deals for its employees; I just ordered a brand-new $200 winter jacket for $40. I mean, with a deal that obscenely good, how can you not? (I think I spend more money at that job than I actually earn....) And, living in a northern state, you can never have too much cold weather gear. You remember the Stark words, yes?

Because fully half of my fun/miscellaneous budget was eaten up by my contribution to our garage's new C2 "Imperial" rower (cue Darth Vader theme), I'm making a few allowances to stretch that this month since technically we bought it in August. Next month I'll have to be extra diligent, though, since our kung fu instructors' weekend retreat is coming up around Halloween, and my paycheck will be a bit slimmer since I had to go home early on Friday with that migraine. Oh, do I dream of a day where I'll have paid time off!

I am now firmly in the midst of my Zone kitchen experiment as well. It's tough to balance all the macronutrients (carbohydrates, proteins, and fats) at each meal! I had a successful weekend of meal planning and food preparation this weekend, though, so I'm excited to see how this week goes now that I have a better idea of what to expect.

It's easy to get discouraged when you're handling normal life stresses (job satisfaction, daily commute, messy house, busy calendar...) and trying to work towards a healthier lifestyle on top of that. Being a recent grad, I've definitely been dealing with some grass-is-greener moods myself. After 5 years, I couldn't wait to graduate and have a steady paycheck. Now I do, but it's still a temporary position (cue stress!), and the 19-mile work commute downtown takes longer than my previous 45-mile commute to school. Gotta love that downtown traffic! I guess I was naive last year at this time, in the midst of battling with my thesis, to think that my life would be less stressful without homework; these paychecks are only bringing me closer to student loan bills and "Wait, this isn't what I want to do with my life" concerns.

Anyway, all we can do is continue to take small steps towards where we'd like to be, and remember to appreciate the things we do have now. For the past few weeks, I've been posting quotes I enjoy each Monday on Twitter with the hashtag #MotivatedMondays to try to start the week off strong. And though my Asian Studies degree no longer reflects my desired career path, it did supply me with a wealth of philosophical Chinese quotes. Here's one for today:

Embrace Your Inner Rogue: Get Paid

Today's post is going to be a bit of a departure from focusing on the physical and nutritional side of weight loss. After all, you're weight and fitness are not the only elements that determine your happiness. There's this sneaky little bastard called "Quality of Life" and I'm finding that it's pretty important too. 

As I mentioned in my last post, I've been experiencing a lot of stress because it feels like my creative career is going nowhere. I can create things all I want, but if I can't figure out how to monetize my creative endeavors or the skills I use to create them, then how can I expect to pay the bills by doing what I love? Yes, dear readers. It would seem I have a few more stats to reroll on this here quest for greatness.

As actors we're taught to take any job that will have us at the beginning of our careers. Get out there, get the experience, get the exposure, and eventually it will fall into place. Maybe I'm luckier than I give myself credit for, but I have no problem finding unpaid gigs. I've been doing them for years. For every paid acting job I've had, I've probably had eight unpaid full scale productions in which I've been abused by directors, other actors, or frankly, just plain knocked around by an overall unprofessional process. I'm not saying I didn't learn from these experiences or didn't benefit at all, but for the most part, I gained roles to put on my resume and nothing else. That's not without value, but at a certain point, you have to ask yourself if it's worth the time and the energy to commit yourself to unpaid pursuits with guaranteed experience vs. working less, but being able to focus all of your energy on getting those elusive paid opportunities. 

This goes for writing as well. I've been so honored to have so many fellow bloggers ask me to join their staff of unpaid writers/reviewers, but at this point, I don't have have any more time to pour into more unpaid work. I'm organizing the future of Project Reroll so that my amazing community of readers can flourish and share what they've learned on their own health journeys. I already review and discuss geeky topics as an occasional guest-host with my friends on the Anomaly Podcast (which you need to check out if you haven't!). Plus, I am currently managing a very lengthy and involved post production process on a web series that I wrote/produced with a friend. When I turn down these unpaid opportunities, I'm not being snobby. There just aren't enough hours in the day for me not to get paid for any more extra time and effort. My dance card is pretty darn full.

I know I'm not the only artist or entrepreneur going through this struggle, but over the last few days I've realized something surprising. I might be the one who is standing in my way. How am I supposed to receive currency in exchange for goods if I'm afraid to place an actual value on my skills. Obviously, waiting for someone to pay me for things that I've very publicly given away for free is a terrible marketing plan. 

So here's my new goal; It's time to embrace my inner rogue. Would Jayne Cobb work for free? Even Han Solo wanted pay for his fair cut for saving Princess Leia from the Death Star. Bronn might give Tyrion color commentary for free but when it comes to his sword, he's paid to use it in Lannister gold. Well boys, step aside. There's a new rogue for hire in town and her name is Anne!

So how to start on this quest? Like any of the other skills I've "rerolled," I started by creating steps to help me break down my overall goal into more manageable bite sized pieces.
  • Step 1: Determine my marketable skills and be prepared to place an actual value on them. For me these would be acting, writing, and creativity/life coaching. I'm going to think very critically about how to turn these skills into marketable business ventures and place actual values on them so that I can charge for my services. When you fear no one will ask you how much you're worth, it doesn't seem worth going to the trouble to price your skills, but if you don't, then you'll be caught with your pants down when someone does! The ensuing frazzlement could lose you the gig... and they may be confused by your lack of pants. Of course, that doesn't mean I can't cut deals for friends or for projects that I really want to do, but then I'll be ready when someone says, well how much do you charge for that? 
  • Step 2: Do some research on what you should charge. If you get confused or nervous about what you can ask for when it comes to compensation, look into what your peers are charging and how they've managed to get paid jobs in their fields. For me this will mean looking at people I know with similar experience levels who are getting paid and seeing how I can emulate or even undercut them when it comes to price. This step comes to you directly from my uncanny ability to "win" at the Auction House in every MMO ever. Time to get some real-life bags of gold. Lok'tar Ogar, people.
  • Step 3: Be prepared to negotiate and to face conflict. You need to accept the fact that with this new great power to get paid for your work will come more responsibility on your part. If people are actually paying you, they'll have every right to be demanding of your time. You'll have to develop firm hand when it comes to scheduling you're time and dealing with clients. You'll need to come to the table with a strong sense of self and what you do. If you can't face conflict productively or negotiate business deals without collapsing in on yourself like a dying star, then being an entrepreneur isn't for you. You are the CEO, the production line, and customer service rep all in one. You'll get all the praise, all the cash, and all the grief so you have to prepare yourself to deal with all of that.

  • Step 4: Update Your Websites/Create a Store. When you embrace your inner goblin and start shamelessly hawking your wares with a hearty, "I got what you need," you'll need somewhere to direct your traffic. For me, that will mean creating a public listing of my services so that I can give someone my business card with a quick pitch and then send them to my website for a more detailed breakdown of what I'm prepared to offer them. This ties in with the first step of figuring out what you can sell, but in this case, you'll also have to think about how you're going to make it the most appealing deal your client can find. 


Clearly I'm at the beginning of this process and I have no business talking like a know-it-all about this stuff, but this is where I am with it right now. I'll post more about this as I move through the steps and hopefully my depression will dissipate as I make a more active effort to handle this stressful issue in my life. I hope my conclusions and my process provide some inspiration if anyone else in a similar conundrum. If you have any advice for me or other readers, please leave it in the comments!

Eating Primal: The Game of Thrones Diet


While the Paleo diet can be described as "The Caveman Diet," I've heard people refer to The Primal Blueprint as a more "Medieval Diet"- or as I like to think of it; The Game of Thrones diet. 

Now we're cookin' with wildfire (Note: Cooking with wildfire is not recommended. Proceed at your own risk!). 

Think like a sellsword traveling the King's Road, a man of The Night's Watch, or a member of the Dothraki Horde. 80% of your diet consists of lean meats that are high in protein, eggs, vegetables, fruits, tubers (like sweet potatoes), and nuts (but not peanuts!). You may have a very limited supply of bread, red wine, full fat dairy items, and yes, even deserts if you happen to make it to King's Landing with enough coin, but winter is coming and these delights come at a cost. Therefore they should only be about 20% of your diet.

The main thing to remember is no processed foods. If you indulge in something like a slice of cake or an ice cream sundae, that's your 20% for the whole day. Allotting yourself half a cup of milk daily for tea or coffee seems to be fine, or using a bit of vinegar to aid in your cooking, or the occasional 2 tbs of salad dressing. From what I've found in my research, it's most important to avoid grains as much as possible but again, if you want to make that treat your full 20% for the day and forgo milk in your coffee/tea or a slice of cheese with your fruit, then by all means, indulge away.

So we've covered "The Medieval." Let's talk about the Science. 

Why no grains? Why nuts, but no peanuts? Hell, how can full fat items like milk and nuts, not to mention and high sugar items like dried fruit help you get healthy and lose weight. 

The truth is, grains have gluten and it turns out that most people are so used to how it makes them feel that they don't even realize they have an intolerance. Removing it from your diet for a while and letting your body cleanse/adjust before ingesting small amounts again will help you find out how your body reacts to it. You may find your get stomach aches after eating grains because as they break down in your gut, it can cause inflammation that will disrupt the body's ability to break down food properly, clearly something that is not conducive to weight loss. These effects can also instigate issues with allergies, arthritis, asthma and many other more series medical issues such as Crohn's disease, lupus, and multiple sclerosis. When the affects are seen in the brain, gluten allergies can be linked to depression, anxiety, and other behavioral diseases like bipolar disorder or even schizophrenia.

As for peanuts, they are actually legumes (this category also includes some varieties of beans, lentils, garbanzos, peas, and soybeans). Eating plants is healthy, but what we consume when we eat legumes is actually the seed and it breaks down differently in your body because it contains lectins which can cause inflammation. 

When it comes to fats, the body does require some fatty acids. It does not produce them on its own and therefor we do need to consume some fats, but we need to focus on the right kind and the right amounts. In a nutshell (pun intended!), you want to get your fat from the most chemically uncomplicated source so that it breaks down easily in the body causing the least inflammation and gut/digestion disruption in the breakdown. Thats why olive oil, raw cashews, lean meats, and some full fat cheese are limited on our menu, but not exterminated. What we want to focus on avoiding are trans-fats which have been chemically altered to increase shelf life they often include "hydrogenated" ingredients and will wreak havoc on the body. 

Sugars? Same story. You want to limit yourself to natural sugars found in fruits, but obviously you want to avoid super saturated sugar items like dried fruit because you get a lot less bang for your buck.

In other words:

Sansa=20%


One thing that attracts me to the Primal Blueprint is that it refers to a whole way of life, not just the food you use to fuel yourself through it. It wants us to adopt the behaviors that kept our ancestors lean, fit, and energetic. These are the basic bullet points.

Keep moving, even at a slow pace. You don't have to do crazy amounts of cardio every day, but you should be adopting an active lifestyle where, like our ancestors, you move around a low aerobic pace for long periods of time. Take a scouting mission beyond the wall, traverse the Dothraki Sea, escort Jaime Lannister to  Kings landing. 

Strength training keeps you lean and your muscles compact. People did hard labor daily! Go smithing with Gendry, spar with The Mountain! 

Speed is important. In the game of thrones, you win or you die. This is a dangerous world and sometimes you need to make an expedient escape from King's Landing to avoid throwing in your fate with Ned Stark or run from white walkers and wildings through deep snow. These aren't daily events, but they do happen and you should prepare yourself! Think like Petyr Baelish. Avoid trauma and always ally yourself with the winning side in any conflict. Be like Arya and become the water dancer! Slip through the shadows catching cats, and adjust to new circumstances as quickly as possible. 

Get sleep! If you're following these guidelines, you'll need your rest in order to face a long day at the head of your Khalasar tomorrow. How else will you have the energy to cross the narrow sea and take back the Iron Throne?

Be adventurous and get outside. Learn something! A mind needs books like a sword needs a whetstone. Tyrion might be small, but he never gives up and he certainly enjoys his sardonic sense of humor when faced with even the grimmest of circumstances. Get out there and make the most of what you have! If you've always dreamed of pissing off the edge of the world, go to the wall and do it!

Targeryen Dragonfire Hash


It's time for another Project Reroll recipe! To celebrate the premiere of the new season of Game of Thrones, I thought I would attack the "premiere" meal of the day, breakfast! I love corned beef hash, but that's not in the cards if you're trying to keep to a healthy diet, so I decided to create a new take on my old favorite. Toss out the carbs, and bring on the egg whites, broccoli slaw, romaine, chili powder, and shallots! It's time for a breakfast fit for the Mother of Dragons herself:

Targeryen Dragonfire Hash


Prep time: 30 minutes
Serves: 2 people

Ingredients:

  • 1/4 lb of 90% or more lean ground beef
  • 1 1/2 cups egg whites
  • 1 shallot.
  • 1 tbs basil
  • 1 tbs parsley
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 2 cups Baby Romaine or Spinach (depending on your preference)
  • 1 cup broccoli slaw
  • Hot Sauce (to taste)
Preparation: 
  1. Wash your hands.
  2. Put the beef in a mixing bowl.
  3. Chop your shallot and put it in the bowl.
  4. Add your basil, parsley, salt, pepper, garlic powder, and chili powder.
  5. Put a skillet on the stove over medium heat.
  6. While you wait for the skillet to warm, use your hands to mix the ingredients in the mixing bowl thoroughly. 
  7. When you are done, put the seasoned ground beef into the pan and spread it out evenly. DO NOT add oil to the pan. You won't need it.
  8. Leave untouched for 3 minutes so the bottom layer can brown.
  9. Return and stir continually until everything is cooked to the same level of brown-ness. 
  10. Use a spatula to break up the beef completely and spread it along the bottom of the pan.
  11. Add your romaine or spinach.
  12. Add 1 cup broccoli slaw.
  13. Cook for 2-3 minutes until the veggies start to warm. Mix them in with the beef.
  14. Add hot sauce on top to your desired level of hotness.
  15. Measure out your egg whites and pour them evenly over the ingredients in the pan. 
  16. Cover pan and leave to set for 5 minutes or till desired consistency is achieved.
  17. Uncover and serve!
Other ideas:
Add more veggies! Tomatoes, peppers, mushrooms, the sky's the limit! Get creative!

This dish makes for a veggie filled, protein packed, super filling start to the day with a bit of a spicy kick to boot! After eating this breakfast, I guarantee you'll have the energy you need to gather an army and sail across the narrow sea to claim the Iron Throne- and that's a 100% Khaleesi promise.

In the Game of Fat, You Lose or You Cry


Today was weigh-in day and I finally saw a number I could be proud of on the scale after conquering a few weeks of weight loss agony, plateaus, and starvation mode woes. I lost 5.6 lbs this week and I'm officially down 95 lbs overall! This is a very special victory for me for multiple reasons.

Reason the first! At PAX East, I went off the deep end a little bit. I spent the week prior to the convention reintroducing all the foods I'd been leaving out of my diet, as well as trying to get myself back on track and out of starvation mode. I was also trying not to obsess as much about things and therefor I wasn't planning on looking at the scale till the Monday after PAX. Then came the actual convention. Sure, I did everything right leading up to it. I packed most of my food ahead of time and I only planned to eat out for dinners and for coffee during the day. Then I realized all too late that I would need fresh veggies and I would have to get salads at the con where I wouldn't have as much control over portions or content. This threw off my budgeting both for cash and calories. I also planned to enjoy a meal at Fire + Ice in Boston on Thursday night and even though I loaded up my stir fry with a ton of veggies, I still went to the ice cream bar for desert and DESTROYED the most overindulgent delicious sundae ever complete with mint chocolate marshmallow fudge. My lack of gallbladder screamed in protest. I told it to SHUT IT. It was cats and dogs living together, mass hysteria. Once I had that sundae, my sugar addiction kicked into high gear. My boyfriend got mint chocolate cookies and I had to have one because my costume was "getting uncomfortable and eating cookies=relief." Really? What kind of an excuse was THAT? I had a brownie one night. I ate a whole chicken caesar wrap the size of a baby arm another night. It was out of control. I felt out of control and I didn't like it.

When I came back home on Sunday night I said, "That's it. You've had your fun. You need to get your head on straight now that you're home. No excuses." It was a struggle, but I persevered. I ate all the food on the plan just like I'd been doing prior to leaving. I can now say I've made it through the whole week without depriving myself of anything I was supposed to eat which is huge for me. I also resisted SEVERAL temptations along the way since did end up going out to dinner two nights in a row! However, I didn't stray. I made a plan and I stuck to it. It was agonizing and willpower draining, but I feel like I finally exorcised all the sugar and chemicals from my system and I have my eyes on the prize again.

Reason the second for celebration is that my brand new Fitbit arrived on Wednesday. It's a handy little wearable gadget that tracks my steps, my distance, and my daily calorie burn (based on my height, weight, and other statistics) and uploads all the stats to a website so I can log my food and make sure I'm hitting the right calorie deficit to hopefully lose two pounds a week. It's pretty incredible! I will do a more in depth review of the product at some point, but suffice to say, this little tool gave me the kick in the pants and the extra bit of excitement I needed to push through some of the really hard days I had this week. 

Reason the third: I found out that I'm officially not obese on the BMI scale anymore, just overweight. So instead of being a fat fat fatty, I'm just a wee bit tubby. Still, it's a huge accomplishment and I wanted to relish it because I'm never going back to that old me ever again. 

So, I ask you, what better way is there to celebrate all of these accomplishments then to assume my rightful place up on the Iron Throne of Westeros in my Megan Lara Khaleesi t-shirt. I really can't think of one.

Night's Watch Sweet Potato Stew Recipe

I've been exploring cooking a little bit with my boyfriend. It's really important to learn a bit about cooking if you're going to adopt a healthier lifestyle. Let me preface this with the fact that I would kill myself if I had to cook every night of the week. That's why I pre-make my salads for the week. If you put in a little time on your day off, you can easily prepare yourself for a delicious and nutrition-concious week full of home made food that only requires a quick zap in the microwave to prepare. I'm definitely a beginner in the kitchen, but it's been really fun to level a new crafting skill by picking appealing dishes out of the blue and then trying to make them using recipes we find online. I really crave warm comforting vittles during these cold winter months so we have experimented with a few stew recipes and I've made plenty of little changes (like using less salt, low-sodium beef broth, and sweet potatoes instead of regular) to make this final recipe perfect for someone looking for something both delicious AND nutritious! Stew normally needs to cook for hours on end, but if you are careful to cut the meat, veggies, and potatoes into small enough pieces, you won't need as long to achieve that tender yummy goodness!

So without further ado, here's Anne and Brandon's recipe for:

Night's Watch Sweet Potato Stew
(best if eaten whilst watching Game of Thrones)

This recipe serves 6.
Cook Time: 2 hours (You'll need about 30 minutes of prep time on top of that).

Ingredients:
  • 3 lbs boneless chuck roast, cut into 1 to 2-inch pieces
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • 2 onions, cut into 1-inch chunks
  • 1/4 cup flour
  • 2 cloves of minced garlic
  • 1 cup red wine
  • 1 1/2 cups low sodium beef broth
  • 1/4 tsp dried rosemary
  • 1 bay leaf
  • 1/4 tsp dried thyme
  • 2 carrots, peeled, cut into 1-inch slices
  • 1 stalks celery, cut into 1/2-inch slices
  • 2 sweet potatoes, peeled and cut in 1 inch cubes
This is extremely important. Before you begin, recite this oath:

Ok! Now you're a member of the Night's Watch. You are filled with the honor of your order and are soon to be filled with stew! Now roll for initiative. 

Preparation:
  1. On medium-high heat, add the vegetable oil to a large pot that has a lid. 
  2. Wait for it to smoke a bit and then add the beef and brown very well. It may take a few batches to brown all the meat. Add salt whilst the beef is browning. 
  3. After the beef is browned, remove the it with a slotted spoon set aside. 
  4. Add the onions and sauté for until they soften. 
  5. Reduce heat to medium-low, add the flour, and cook for 2 minutes. You will want to stir often. 
  6. Add the garlic. Cook for 1 minute. 
  7. Add wine and deglaze the pan. Scraping any brown bits stuck to the bottom of the pan. The flour should thicken with the wine and it should come to a simmer. 
  8. Let it simmer for about 5 minutes, and then add the beef broth, bay leaves, thyme, rosemary, and the beef. 
  9. Return to a gentle simmer. Now cover and cook on low heat for about 1 hour. 
  10. Add carrots and celery. Simmer covered for another 30 minutes.
  11. Add sweet potatoes, stir, then cover and simmer for another 30-45 minutes. They cook faster than normal potatoes, so make sure you check back around the 30 minute mark to make sure they're getting soft, but not so soft that they're completely falling apart when you stir.
  12. Once you're happy with the tenderness of the meat, veggies, and sweet potatoes, turn off the heat and let it sit covered for about 15 minutes. Now it's ready to serve!
I generally eat about a cup and a half of this stew with a salad on the side, but of course you can serve it as you like! Let me know how you like the recipe and if you do make any changes, feel free to post them in the comments to share your variations and advice!

80 lbs Lost and Freezing My Ass Off!


Needless to say, it's winter, and it's cold, but I swear I'm enduring a long winter on "The Wall" in Westeros. In NYC, it's been 14 degrees every morning while I wait on the platform for the subway. I never used to get cold, but now I am always freezing. It's like when I go outside, the time it takes for me to get cold is 10 seconds flat. When I come in from the cold, getting myself warm is impossible. The only way is four layers of clothing and then I sit under my comforter on my couch next to the radiator with gloves on for about 40 minutes. The second I get out from under that blanket, I get cold almost immediately and then I have to get back under the blanket again. I thought I was imagining it, but when my boyfriend was here this weekend and I got up to get a glass of water, he would notice that I would be DRASTICALLY colder to the touch when I got back.

The only thing that's changed is my weightloss. My first thought was that it must be caused by the loss in "insulation," but it seems pretty extreme for that. So I did some research online. A lot of places suggest that restrictive diets can cause your metabolism to slow and then your body shuts down certain functions, making you prone to getting cold since your energy is being stored and redirected elsewhere. I don't think this is the issue because I'm following the Nutrisystem program to the letter, so while my food intake is controlled, its not below what it should be. Then I found this other point of view on the topic. If you are heavier, it stands to reason that you have more blood vessels over the surface of your fleshy-fattiness. Those vessels are your body's natural cooling system. So when you lose a significant amount of weight, those blood vessels don't just go away. You end up with less skin surface area, but the same amount of blood vessels you had before. Whether they eventually become absorbed or not is unclear. Hence your cooling system is far more efficient and sensitive than someone of a similar size who has not lost a huge amount of weight. From what I'm experiencing, this seems to make a lot of sense. It takes about 6 months for skin to adjust to a huge amount of weightloss, so maybe it will take a similar amount of time for my blood vessels to adapt? Time will tell. All I know is if I have to endure another winter "On the Wall" I think I'll become a deserter of the Night's Watch.

In other news, I've officially lost 80 lbs! It's pretty nuts. I'm proud of the work I've put in and I'm excited to continue all the hard work ahead. It's crazy. This goal actually seems attainable. I'm just about 2/3 of the way there and as I make dates for vacations and events this summer and count the weeks between then and now, I'm realizing that I could very well be AT my goal weight and into maintenance by then if I stay focused. How AMAZING is that? Here's to a great week for all of us!

Thanksgiving Diet Plans


Today I weighed in at an even 57 lbs lost. I lost 3.6 pounds this week, which makes me very happy since it makes up for my puny -1.5 lbs lost weigh ins from the past two weeks. Of course any loss is nothing to sniff at but I like to aim for two pounds lost every week. Plus I'm always happy to see my weight go DOWN during the holidays.


This weekend my boyfriend and I decided to challenge ourselves to make beef stew so we could eat it whilst enjoying "Game of Thrones." My goal was to make it in the healthiest way possible. I used low sodium broth, cut away the fattiest bits of the meat, and loaded it with more veggies than called for. Maybe this would be weird, but next time, I'd consider using sweet potatoes instead of the regular kind. I think the sweet/savory mix would probably be delicious and of course healthier. It turned out really yummy, I got a guilt-free break from the Nutrisystem program AND I learned something new!

I'm curious about what everyone is planning to do for Thanksgiving this week. I'm planning on skipping my afternoon snack and having a little white turkey, a couple spoonfuls of sweet potatoes and a small serving of desert while staying strictly on plan for the rest of the week/exercising after work every day. I feel like that will be a fine planned indulgence for the holiday. I think the important thing will be to have a plan and not just fly blind. Good luck everyone and Happy Thanksgiving!

Overeating vs. Gym Defeating



Well today is weigh-in day and i'm down 3.6 lbs from last week, which is very significant to me because it's been a rough week emotionally speaking. I won't get into the details but I've been having problems in my relationship and it's really been dragging me down. I have barely slept this past week and my energy level has been really low.

I'm an overthinker. I try to think of every possible scenario for a problem to play out so that I'll be prepared for whatever pain or struggle I'll have to endure. Normally, this "thinking" and nerve-wracking heartache is accompanied by chocolate, ice-cream, and all sorts of other delicious, comforting yum-yums. In the past I would have binged on that stuff without a second thought. It would have been so second nature that I wouldn't have even considered the abuse I was putting my body through at the time.

Yet, as hard as the last week has been, I haven't done that. There have definitely been times when I wished for a bowl of icecream or a bag of Halloween candy that's on sale at the corner store, but I haven't taken the bait. 

In fact, I think I might be becoming one of those people who takes out their frustrations at the gym, which frankly has shocked the hell out of me. I've done a lot of that over thinking on the elliptical machine instead of on the couch with candy. It's even given me a chance to pump myself up for confrontations and take out my aggression about things that have hurt me in a way that doesn't hurt other people. It boils down to working out giving me a sense of self confidence. The gym is the only place that is completely about me- me being selfish about what I need and what I want for my life and my future. Because of that headspace, I've been able to get in touch with my more selfish emotions and desires without feeling the need to apologize for them. It's not a perfect system, but I am noticing that my coping mechanisms are changing.

I'm not in a place where I can definitively say that one of these coping mechanisms works better than the other, but I can at least say that I've made the healthier choice and stayed on track with my journey rather than letting myself get derailed. So as difficult as things are right now, I can be proud of that. 

Personally, I'm hoping I'll get into the 100s this week or next. One-derland is CALLING ME! Hopefully I can continue to keep my nose to the grindstone and get it done despite whatever else is happening in my life.

Throw Down the Gauntlet!

Did Daenerys Targaryen become of the Mother of Dragons by slacking off and letting her environment define her? 


Clearly not. 

I've been recommitting myself to the gym over the last few days. I realized that in order to keep improving, I needed to turn up the heat in terms of the difficulty. I've been doing the same thing on the elliptical for over a month and it has become easy. I increased the elliptical's incline and the resistance in my interval and weight loss program and was rewarded by a higher calorie burn than I've ever had before as well as keeping my heart rate in the right zone for more of the time. I felt like I was going to die the first time, but I think that's a good thing. I'm challenging myself again and it's good to know I can depend on myself to throw down the gauntlet for the first time in my life.

Motivational Thinking: I Have Many Skills


There are things I've started to tell myself to stay on track when things get hard or food gets tempting. In the past, being a stickler about having to do the same thing every day has caused me to lose large amounts of weight in the beginning, but resulted in a failure later on when I'm not able to continue measuring up to my own incredibly high standards. After all, no two days are the same, so if you limit yourself to certain behaviors performed in an exact order every day, there's only so long you can carry on before you start to feel trapped by the process. The key difference here is that I've been educating myself on how to be more active and how to supplement the Nutrisystem program so that if I do have to adjust, I have more options for strategies and solutions at my finger tips. This time around, I'm allowing myself to be more flexible and adopting a "slow and steady wins the race" mentality so that I can focus on lasting life-style changes rather than yo-yoing down so fast that I fail to maintain the weightloss and shoot up higher than I was in the first place. It's the difference between Jedi and Sith training.


So without further ado, here are some of my go-to motivational mantras:
  • You can sleep in, but then you have to go to the gym after work and work twice as hard.
  • You never regret going to the gym, but you do regret not going.
  • If you want to eat off of your specific diet plan, then PLAN how you're going to do it so that you're not undoing the hard work you've done. On these "indulgence" days, you MUST go to the gym. 
  • If you're dreading your typical boring workout, you don't have to do it. BUT! You do have to go to the gym and take a class.
  • If you have a setback, let it go and move forward. You're not going to undo a mistake by harping on the past. The only thing that will undo a setback is what you DO in the present and plan to do in the future.
